Just some points about books on the list that I've read that you have not, yet:
Sandman Series: aside from the good writing, it is interesting in that each volume of the series is drawn by a different artist, so you get this progression of interpretations of the characters adding to the surreality of it.
Belgariad: Good writing unfortunately marred by something a bit too blatantly like LoTR.
Cryptonomicon and it's sequels aren't SF. They're techno-thrillers. Think Dan Brown except not rubbish.
