I've long been surprised that this has not been done in fan fiction yet.

It has been. In fact, I've been told that somewhere on one of the Incredibles' discs is an easter egg in which Edna Mode says, obviously to Syndrome, "And for you, darling... a cape!" With a diabolical smile on her face.

Just awesome. Edna is clearly modeled after Edith Head, too, which just makes the comparison more delicious.

I would quibble only about it being the most quotable movie; The Princess Bride still holds that title AFAIAC.
